On the 14th floor of The Tokyo EDITION, Ginza, Sophie at EDITION, pays homage to Japan's abundant seasonal ingredients and rich culinary traditions through the lens of a modern brasserie. Local produce sourced from small regional farms informs the restaurant's brasserie-inspired menus from Morning to Lunch and Dinner, all accompanied by a seasonally changing cocktail menu as well as a diverse wine program.
